Courgette Sabzi

Asma Khan's stir-fried courgette based on a traditional Bengali recipe.

Asma Khan is an Indian-born British chef, restaurateur, and cookbook author. She owns Darjeeling Express restaurant in London's Covent Garden and was profiled on the sixth season of the documentary series Chef's Table. She also happens to be a friend and a massive inspiration to us.

One of the many things we deeply admire about her is the use of local and seasonal vegetables and incorporating traditional recipes. Traditionally this dish is made from turai (ridge gourd) in Bengal and as we start to enter courgette season in Germany, it's amazing to be able to share the flavours of home using local vegetables.
